Cassata coffee recipe
The Cassata coffee is a soft ricotta cream that welcomes delicious drops of dark chocolate. Let’s get to work preparing our cassata coffee.

Ingredients
Cow’s milk ricotta 120 gr.
Icing sugar, 20 gr.
Dark chocolate drops, 20 gr.
Espresso coffee, 150 ml.
Candied orange, 15 gr.
Sponge cake disks, 4 by 6 cm.
4 shot glasses

For the sponge cake
Eggs, 2.
Sugar, 75 gr.
Flour 00, 75 gr.
Baking powder, 4 gr.

Preparation
Start by sieving the ricotta with a sieve, then add the sifted sugar and mix everything quickly. Finally, add the chocolate chips and candied fruit and mix everything well.
The result will be a very creamy mixture. Transfer it to a “sac à poche” and then distribute a little of the cream in each of the 4 small glasses.
Now, let’s dedicate some time to preparing the sponge cake. If, on the other hand, you want to shorten the time, you can buy one of the many ready-made ones available on the market.
Whip the eggs in a bowl with the help of a whisk.
Add the sugar a little until it’s blended, and keep mixing. Do the same thing with the flour, stirring until the dough has a smooth, fluffy consistency.
Finally, add the baking powder.
Pour the mixture into an oiled pan lined with parchment paper. Bake in a static oven at 180° for about 40 minutes.
Once the sponge cake has cooled, cut it horizontally in half and make the discs of the above dimensions. You can use a round mold or even an upside-down glass.
Now, place a disc in each glass in the fridge for a couple of hours.
It’s time to prepare an excellent espresso with the mocha. When it’s ready, remove the glasses from the fridge and pour about 40 ml of hot coffee into each one.
Said and done: Cassata coffee is ready to sweeten your days.
