A jammy single origin coffee with notes of plum and chocolate.Light roast.This natural coffee is not just any natural coffee. This is the Pura Fruta (only fruit) lot from the El Platanillo farm. The farm is located in the San Marcos region in southwestern Guatemala. The neighbor to El Platanillo is the highest volcano in Guatemala, Tajumulco.This Pura Fruta lot is a blend comprised of 40 different day lots with different varietals. Each lot was “cupped“ (cup tasted) and chosen by the leader of the Quality Control at El Platanillo. The focus was to find a mix with lots of fruit, good balanced and wide range of flavors.They ended up selecting 3 varietals for this Pura Fruta lot: Bourbon, San Roque and Java. Each varietal was examined with a Brix refractometer, which measures the sugar content in the cherry pulp. Each varietal is cupped at each Brix level to understand how ripeness level affects flavor in the cup. This information is shared with farm managers daily so they can pick accordingly.After this the coffees were dried separately and milled separately and then cupped again and then at the very end, blended.By now you probably understand that this natural coffee is not just any natural coffee.
