The isolated San Jose de Lourdes District in the San Ignacio Province of Cajamarca has a very distinct climate compared to other surrounding districts. It’s much cooler and has higher rainfall and this contributes to coffees carrying citrusy and rare buttery characteristics. Roger Chilcon Flores owns a 3 hectare farm in this prime coffee-growing location, specifically in the El Diamante Village. Some of his family members also own land, grow coffee and manage their farms together, but Roger manages the picking, processing, and drying of the coffee.

Ripe coffee cherries are picked and pre-fermented overnight in bags. The cherries are then depulped and fermented for 24-36 hours depending on weather conditions. The coffees are then washed and dried inside a ventilated greenhouse on a plastic lined, wooden patio. The cherry maceration and extended fermentation combined with the vibrant acidity that comes from high altitude lends a very pronounced fruited note in this coffee. It’s juicy and chewy, and reminds us of apple cider, strawberry jam, and fig bars, making it an excellent choice if you’re in need of a bright, refreshing coffee!
