Kiunyu Factory, located within the Kirinyaga district of central Kenya, serves the members of the Karithathi Farmers Cooperative Society. After harvest, coffees here are pulped before being fermented overnight to break down sugars. Next, the coffees are washed in fresh water and spread out on raised beds. Continuous sorting and hand turning of the parchment takes place throughout the drying process.
