The Classic. 

For us, this coffee represents all that is perfect about the Red Bourbon Cultivar and grown in the volcanic soils of the Apaneca/Ilamatepec mountains.

We’ve put this through several different pour-over brewers, and can attest to the wide complexity yet familiar affair of caremel sweetness and fruit nuance. Lighter brews showed beutiful bouquet florality and pink lady apples. Stronger brews had chocolate for days, and although the flowers faded away, pineapple, stonefruit, and more richness and liveliness intensified and exploded with character.
