Description

Imported by Falcon Coffees, this coffee comes from the production of Mustefa Abakeno, an Ethiopian small-scale farmer and owner of a farm and wet mill under the same name. The farm and wet mill sit on his 18 hectares of land at an elevation of 2,040 MASL, located in Southwestern Ethiopia, East Africa, in the largest regional state of Oromia, in the Jimma Zone, near the town of Agaro. 

His farm is planted with various coffee types from the Jimma Zone research center. At the wet mill, Mustefa processes the coffee from his farm as well as outgrowers’ coffee, which he keeps separate. An outgrower is a farmer who undertakes to supply a buyer with crops or livestock at some future time and meeting certain requirements; in return, the buyer agrees to make the purchase (perhaps at a pre-agreed price) and may provide other support. Mustefa’s outgrowers are all neighbors and have between 4 and 10 hectares of land each. Mustefa has recently registered as an exporter in order to start selling his coffee directly to buyers, which he can only do now due to regulation changes in Ethiopia. 

He wash processes half of his coffee using a small disk pulper, and he natural processes the other half, but all the coffee is semi-shade dried. Due to a lack of water in the area and limited space to ferment the coffee, Mustefa ferments the coffee for a short period of time before he moves it to his drying beds, and the result is something like a light honey process. The washed lots are fermented for eight hours and dried on raised beds for 13-16 days. Natural lots are dried for 24-27 days.
