Our latest Roaster’s Choice Decaf comes from Finca Santa Teresa in the mountains of Sierra Madre de Chiapas, just south of Chiapas State.
Santa Teresa is owned by Jorge Esteve, who in 2019 partnered with Cari Coffee, a company helping Mexican commercial producers to start producing specialty microlots. Before 2019, the coffee farming at Santa Teresa was becoming unsustainable due to stagnating prices and increasing costs. After teaming up with Cari, Jorge has made several changes to his processing techniques.
El Triunfo is classed as a Biosphere Reserve, located between the state’s largest hydrological regions, the Pacific coast, and the Grijalva- Usumacinta River basin. The mountains are home to a huge variety of plant and animal life and are one of the most diverse evergreen cloud forests in Mexico.
