Description
Jose Cienfuegos processes coffee from his farm “Trincheras” at Finca Fatima, which is both a farm and a mill owned by Ernesto Perez close by. While the elevation is only 1350 masl, Trincheras sits on the northern edge of the tropics in Veracruz, Mexico, where cooler, wetter weather and long, cool nights during the harvest slow down cherry ripening leading to longer cherry maturation and a sweeter cup of coffee. Between that, the varietals grown, and the meticulous processing, this is a soft and extremely balanced cup for any brew method or time of day.
