We are proud to bring back this exciting offering from our friends Michael and Emily McIntyre at Catalyst Trade. This fully washed coffee from farms surrounding the village of Wush Wush along the Agama River is made possible by the hard work of Dinkalem Ademe and his washing station. The McIntyre’s have worked with Mr. Ademe for several seasons and each year find the coffee delivers a lush fruit and very sweet quality. Look for notes of jasmine, kiwi, honey, and Riesling.

Description

Approximately 2500 farmers bring their coffee cherries to Mr. Ademe’s washing station, which is located in the Keffa Zone. Known to be the origin of the coffee legend featuring Kaldi the goatherd, Keffa is considered by many to be the birthplace of coffee. In fact, this region in the southwestern highlands of Ethiopia is where our favorite beverage gets its name.

Coffee brought to the Wush Wush washing station is first screened for quality, then sorted by hand. The selected cherries are pulped and fermented in the shade for 8 hours before being washed with a demucilager (using water from the nearby Agama River). Finally, the beans are soaked for 24 hours, and then dried on raised beds. While drying, the coffee is stirred and sorted by hand with great care, searching out any imperfections. The final result is an exquisite coffee that delivers the famed florals and sweet fruit of a classic washed Ethiopia with an emphasis on stone fruit sweetness.
