Over the last 11 years, we have purchased coffee from Mauricio Salaverria and his team who together run 5 farms called Divisadero Café Farms located in the Apaneca highlands. The vast majority of what we buy is classic El Salvador washed/old stock Bourbon which we use extensively in our blends during the summer months. This lot however is of the Pacamara variety from Villa Galicia (where Divisadero’s mill is located). Coffee is harvested by hand when fully ripe and de-pulped on the same day. The coffee is then dry fermented and then floated twice before being rinsed twice and then carefully dried on raised beds. This careful processing results in an extremely clean cup with flavors of Mandarin orange, apple & toffee.
