Ample, harmonious and structured, a nicely tangy coffee with fruity and chocolate notes, with a moderate length in the mouth.
Antigua is the former capital of the Kingdom of Guatemala. The city is located in the Panchoy Valley in the center of the country, surrounded by the volcanoes of Agua, Fuego and Acatenango.
There is a significant risk of frost in the area, but shade trees also provide protection from the cold, and fires are sometimes lit to avoid any risk of frost. The parchment coffee first undergoes pre-drying in a mechanical dryer until it reaches 25% humidity, then a final drying is carried out on glazes. The coffee thus retains its beautiful bluish color.
