Description

Carbonic Maceration (CM) is a new and unique technique in the world of coffee processing. Ripe coffee cherries are loaded into large containers and the oxygen is flushed out using compressed CO2. This lowers the overall temperature of the chamber and allows the probiotic bacteria, lactobacillus, to thrive. Lactobacillus consumes sugars in the coffee cherry and produces CO2 and lactic acid.

Washed coffee from Worka Chelbesa is known for its big floral flavors, tea-like body, and honey sweetness. Our CM Washed lot for 2021 maintains the lovely floral notes while highlighting the  stone fruit flavors— with sweet peaches and nectarine being quite pronounced. There is great body and texture in this coffee and the acidity is nicely rounded by the fruitiness. This coffee marries the flavor profiles of washed coffee from the Yirgacheffe and Guji regions.
