Here the best beans of this variety undergo the monsooning process, that is, they are stored for months in special warehouses sheltered from the rains but exposed to the hot and humid winds of the monsoons, which cause the beans to swell and dry them at the same time. , completely transforming its sensory characteristics.
The result of this process is a single origin blend with an intense, persistent and decisive taste, with the typical notes of spices, malt and dried fruit. This coffee beans, prepared as an espresso, generates a very voluminous cream and a syrupy and consistent body.
