Description
The cascara, a Spanish word that means skin or shell, is the peel and the small part of pulp present in the coffee fruit.
Immediately after harvesting, the coffee cherries are de-pulped and, if the beans follow their path that will lead them to the cup, the pulp is dried in the sun.
This cascara is produced with the pulp of the coffee cherries of the precious Geisha variety. This coffee is grown in the Finca Hartmann, in the region of Santa Clara, Volcan in the Central American state of Panama, according to organic farming practices, therefore without the use of pesticides or chemicals. The coffee cherries are harvested at 1300 meters above sea level.
