This year’s Haitian selection comes to us from the town of Colin, in the Pot-de-Chambre commune of Thiotte, and was sourced with help from our partners at 1804 Coffee. We are excited in the fact that this is the producer’s first-ever harvest to sell as specialty grade coffee. 

Ermontil St. Jean and his son Wilter St. Jean, broke away from an old declining coffee cooperative because they were too focused on subsidies and not producing quality coffees or taking care of their farmers. They established the APPCC (Association Petits Planteurs Café Colin) in an attempt to focus on quality and sustainability. 

Ermontil is a trained coffee technician who spent years working for other cooperatives, learning what worked and what did not. He made enough money to send his son, Wilter, to attend university to become an agronomist for the ability to secure steady work in the larger agricultural regions in Haiti.  Wilter, instead chose to move back to the mounts to help his father start APPC and support farmers with better training and farm regeneration support. 

This lot comes from St. Jean’s own farm in Colin, which sits at about 1400 meters above sea level and consists mainly of Arabica Typica coffee. 

In the cup, you’ll find aromas of vanilla, caramelized sugar, and chocolate. It has a soft tangerine acidity and a smooth finish. If you were a fan of our Savan Zombie lot from the last harvest you will be sure to enjoy Pot-de-Chambre. Comparatively, it is a bit sweeter and fuller-bodied than last year’s Savan Zombie, but with a similar overall flavor profile.
